SUPER SIMPLE CHEESY BROCCOLI CASSEROLE

2- 10-oz. pkg. chopped broccoli, thawed and drained
1 stick margarine
1/2 c. milk
1/4 c. onion, finely chopped (optional)
1 can cheddar cheese soup
3 eggs, well beaten
1 tsp. salt
1 sleeve saltine crackers
Preheat oven to 350. In a large microwavable bowl, melt 1/2 stick margarine. Remove from microwave and whisk in flour; blend in eggs, cheese soup, milk and salt. Once thoroughly blended, mix in broccoli; add onion (optional).  Spray a casserole dish with nonstick spray and spread batter into dish. Use food processor to crush crackers into crumbs; sprinkle over batter. Melt remaining 1/2 stick margarine and drizzle over cracker crumbs. Bake for 30-35 minutes or until topping is lightly browned.
