YUMMY EASY BLACK-EYED PEA SALAD

This is so easy and so tasty! Great for covered dish luncheons, pot lucks, family meals or any special occasion.
2 cans Black-eyed Peas, drained and rinsed
1/4 c. green onions, chopped 
1/4 c. red or purple onion, diced
1/4 c. red bell pepper, diced 
1/2 c.tomato, diced
3 tbsp. red wine vinegar
 4 tbsp. olive oil
 1/2 tsp. garlic powder
 1/4 tsp. black pepper
 1/2 tsp. salt
 1 dash of Tabasco sauce

Gently stir all the ingredients together; refrigerate for 2 or more hours - the longer it sits, the better it marinates. Test it and add more Tabasco before serving if you think you want to spice it up a bit.
